How Letterbox Roasters Began

Letterbox Roasters started back in 2015 when Dave Copeland realised he wasn’t ready to step away from coffee after more than 30 years working in hospitality—mostly in bustling cafés across Byron Bay, Ballina, Lismore and Mullumbimby. After selling The Bank Café in Lismore, his wife was relieved yet slightly puzzled about what to do with the endless stash of black T-shirts he’d collected over the years.

But the real challenge was access to truly fresh, high-quality coffee beans. With twelve years of roasting experience from his café days and a strong network in the industry, Dave began roasting ethically sourced beans for himself. When friends and family sampled the results, they convinced him to start selling his blends—and that’s where the story of Letterbox Roasters really took off.
